Tasting Note

Deep ruby-red colour, thick at sight with pithy taste. Fragrances of wood and red ripe fruits in a background of butterscotch and chocolate.

• • Harvest: Handpicked from mid-September to early October
  • Traditional fermentation for 10-15 days in stainless steel tanks
  • Punching downs every 4 hours during the whole 24 hours to achieve a gentle extraction. Malolactic fermentation
  • Maturation: 12 months in French oak barrels 225 Lt (50% new – 50% second fill)
  • Ageing: 12 months in the bottle before release
