Tasting Note
Bright pale yellow color with light golden hues. The nose is vibrant with aromas of citrus, pear and apple, as well as elegant fresh pine resin. Mouthwatering with a dry and refreshing palate that leads to a line-and-pine, saline finish.
After picking and pressing the grapes, the clarified must is tank fermented at controlled temperature 18-20° C. Small quantities of pine resin are added to the fermenting must. The concentration of resin in the wine is 1 o/oo (parts per thousand). At the end of fermentation the resin is removed from the wine. No oak.
Ideal for pan-fried fish (red mullet, sardines etc), Greek salad, dishes rich in olive oil, feta cheese, spit-roasted meat (“gyros”) and traditional “tzatziki” (yoghurt-based dip with garlic, cucumber and olive oil).
Best served slightly chilled (10-12° C).
